White Beans With Swiss Chard and Rice

Last night’s dinner compliments of a New York Times  recipe

White Beans With Swiss Chard and Rice

red chard

chop and used stems and leaves

added kale, used brown rice

This stew turned out very well!  By leaving out the parmesan, it’s a vegan treat.  I doubled this recipe, added a bunch of kale and used 1/2 veggie broth and 1/2 water for the liquid. 

My measure of success: the kids enjoyed it! :-)
