Harvest Lentil Stew
Lentil, Sweet Potato and Apple Stew
Ingredients
- 2 cups lentils
- 4 cups water
- 8 cups vegetable broth
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 1/2 tsp cumin
- 1-2 tsp paprika
- 1 tsp cayenne pepper (optional)
- 2 celery stalks, cut into chunks (we don’t always use the celery)
- 2 sweet potatoes peeled chopped into 1 inch chunks
- 2-3 small yellow squash cut into chunks
- 2-3 Granny smith apples – peel, core and cut into chunks
- ½ tsp salt
- ½ tsp pepper
Preparation:
Stir together all ingredients in a crock pot. Cook on low for 8 to 10 hours.

This easily serves my family – usually with enough leftovers for the next night!
