Quinoa Tabouli


  • 2 cups water or Veggie Broth
  • 1 cup quinoa
  • 1 pinch salt
  • 1/4 cup olive oil
  • 1/2 teaspoon sea salt
  • 1/4 cup lemon juice
  • 3 tomatoes, diced, or one carton cherry tomatoes halved
  • 1 cucumber, peel, remove seeds and dice
  • 1 small red onion diced
  • optional – 1/2 cup chopped parsley and/or mint

In a saucepan bring water (or broth) to a boil. Add quinoa (make sure to wash it if it is not pre washed) and a pinch of salt (you can skip the salt if using broth).  Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork.

Meanwhile, in a large bowl, combine remaining ingredients.

Stir into the cooled quinoa.
