- 2 cups water or Veggie Broth
- 1 cup quinoa
- 1 pinch salt
- 1/4 cup olive oil
- 1/2 teaspoon sea salt
- 1/4 cup lemon juice
- 3 tomatoes, diced, or one carton cherry tomatoes halved
- 1 cucumber, peel, remove seeds and dice
- 1 small red onion diced
- optional – 1/2 cup chopped parsley and/or mint
In a saucepan bring water (or broth) to a boil. Add quinoa (make sure to wash it if it is not pre washed) and a pinch of salt (you can skip the salt if using broth). Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork.
Meanwhile, in a large bowl, combine remaining ingredients.
Stir into the cooled quinoa.
