Tofu and Veggie Pasta
- 1 yellow squash diced
- 1 zucchini diced
- 1 onion chopped
- 1 green pepper chopped
- Mushrooms of your choice
- black olives
- 1 block of tofu – freeze and defrost or get the sprouted stuff
- tofu crumbles (optional)
- 2 cans diced tomatoes – spicy kind
- 1 jar of tomato sauce
- 1 box of whole wheat pasta (I use penne or rotini)
- spices – salt, pepper, basil, oregano
Directions
- Prepare pasta per directions on the box (set aside)
- Cube the tofu and sprinkle with oregano … bake at 400 for about 15 minutes
- Sauté the onion and pepper in the olive oil – add some salt, pepper and dry basil – 5 minutes or so
- Add remaining veggies – sauté until cooked.
- Add baked tofu
- Add tomato sauce and diced tomatoes – simmer all of the above for until heated
- Add pasta and mix it all up
- If you like, you can add heat and add the tofu crumbles
