Tofu and Veggie Pasta

Ingredients

  • 1 yellow squash diced
  • 1 zucchini diced
  • 1 onion chopped
  • 1 green pepper chopped
  • Mushrooms of your choice
  • black olives
  • 1 block of tofu – freeze and defrost or get the sprouted stuff
  • tofu crumbles (optional)
  • 2 cans diced tomatoes – spicy kind
  • 1 jar of tomato sauce
  • 1 box of whole wheat pasta (I use penne or rotini)
  • spices – salt, pepper, basil, oregano

  1. Prepare pasta per directions on the box (set aside)
  2. Cube the tofu and sprinkle with oregano … bake at 400 for about 15 minutes
  3. Sauté the onion and pepper in the olive oil – add some salt, pepper and dry basil – 5 minutes or so
  4. Add remaining veggies – sauté until cooked.
  5. Add baked tofu
  6. Add tomato sauce and diced tomatoes – simmer all of the above for until heated
  7. Add pasta and mix it all up
  8. If you like, you can add heat and add the tofu crumbles
